SUMMARY The Kitchen Steward / Dishwasher is responsible for the overall cleanliness of kitchen areas and dishware, tableware, and service ware under the guidance of the Kitchen Steward Supervisor. SPECIFIC DUTIES AND RESPONSIBILITIES The work environment characteristics described here are representative of those a Team Member encounters while performing the essential functions of this job with or without reasonable accommodations. It may be expanded to include other duties and responsibilities deemed necessary. • Cleans according to standards the following items and areas: o Broilers o Deep fryers o Grills o Ovens o Range hoods o Ware washing machines o Floors o Walk-ins • Carefully rinses all dishware, tableware, and service ware for restaurants before sending them through the dish machine. • Knows and practices Health & Safety standards as set forth by governmental agencies. • Washes hands at each possible point of contamination. • Cleans, deck brushes, and mops all kitchen floors. • Follows 3-compartment sink procedures. • Weekly de-liming of each dish machine. • Uses all chemicals according to use, and knows where data sheets are located. • Reports any malfunctions of the dishwashing machine, including temperatures (too low or too high) or any other type of equipment used. • Sets up, breaks down, and maintains all dishwashers. • Empties all trash receptacles and cardboard boxes in to the dumpsters. • Cleans and maintains all cook lines. • Any other duties as assigned by supervisors in order to maintain kitchen, including but not limited to: o Cleaning ice machines o Cleaning hand sinks o Filling paper towel and soap dispenser • Use of, organization, cleanliness and ensuring inventory of clean floor signs is in good repair. • Other duties as assigned. STANDARDS OF PERFORMANCE • Must have the ability to multi-task. • Communication skills for safety. • Gives good internal customer service to team members. • Available to work when needed, including weekends, holidays, and nights. EDUCATION, TRAINING, AND EXPERIENCE • High school diploma or equivalent preferred. • Customer Service or Food & Beverage experience is preferred. LANGUAGE ABILITY Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. REASONING ABILITY Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form. CERTIFICATES AND LICENSES Must be able to obtain and maintain appropriate and applicable licensing. WORK ENVIRONMENT The work environment characteristics described here are representative of those an associate encounters while performing the essential functions of this job. The noise level in the work environment is loud. There is smoking in portions of the casino, and therefore the environment may be smoky. The candidate must be able to endure hot and moist conditions.
