Located just minutes away from all of the excitement of the glittering Las Vegas Strip and Las Vegas Convention Center, Tuscany Suites & Casino provides guests with a relaxing getaway perfect for business travelers, a long weekend with friends or your next family vacation. We are looking for an Kitchen Manager who will be responsible for the overall operations for the back of house and kitchen area of the restaurant.

ESSENTIAL DUTIES & RESPONSIBILITIES
  • Directly supervise all kitchen personnel with responsibility for hiring, training, disciplinary action, performance reviews & initiating pay increases.
  • Plans menus for restaurant and special events such as wine dinners.
  • Create and design new menus according to season.
  • Responsible for continued growth of overall restaurant including cost management, quality, presentation & innovation.
  • Responsible for overall food cost, labor control and inventory control for food service operation.
  • Standardize production recipes to ensure consistent quality.
  • Ensure that appropriate sanitation, maintenance & safety standards are followed. Implements procedures to guarantee food safety according to the health department.
  • Works with Restaurant General Manager ensuring excellent guest experiences.
  • Maintains excellent knowledge of food & beverage product.
  • Sets staffing levels according to occupancy/promotions/special events.
  • Maximizes sales by teaching, coaching, & maintaining up-sell & service techniques to ensure a great guest experience.
  • Educate kitchen team members on culinary techniques such as proper cooking methods, seasoning, plate presentation, and overall execution. Educate front of house team members on nightly specials and all menu items.
  • Reviews and completes daily payroll in meeting operational productivity standards.
  • Have interpersonal skills to deal effectively with all business contacts.
  • Ability to stand and walk around a restaurant to supervise operations for 8-10 hours.
  • Ability to lift 50 pounds and ability to bend, stoop, and raise arms above head on occasion.
  • Work varied shifts, including weekends and holidays.
  • All other duties as assigned.

EDUCATION & EXPERIENCE

Culinary-focused bachelor's degree or equivalent progressive culinary experience. Minimum of 5 years of culinary operation leadership experience in Italian cuisine. Previous experience with food and labor cost controls, menu development & pricing. Proven track record of running successful restaurants and kitchen operations. Computer knowledge Word and Excel preferred. The position will require a valid Nevada Health card and ServSafe Certification. Candidate must exhibit strong motivational and developmental skills. Must be extremely flexible and have the ability to manage multiple projects with strong attention to detail.
